About Pink Peppercorns

Pink peppercorns, or rose baises, are fun to use in cooking, as they add both a fruity flavour and bold, beautiful colour.

From a small mastic-tree, these little berries are not a proper member of the pepper family. The green berries grow in tiny clusters of white flowers that form in autumn, and become bright red before harvesting. Their name comes from their similarity to true peppercorns in both size and shape. Sweet and mild, they make a colourful addition to many dishes: salads, eggs, white sauces. They go well with rich dishes and are often used to flavour delicate sauces.

Since they are too soft to be ground in a peppermill by themselves, they are sprinkled whole in most dishes. When sautéed or cooked in sauces, you may be surprised that the flavour changes to become very similar to black pepper. Used as a garnish, they make a stunning colour presentation.

What a lovely selection of recipes for using these pink peppercorns. I saw these in the shop but didn't know what to do with them so it was great to find these 3 recipes to help.

Vegetarian Stone Fruit Thyme And Goat Cheese Salad Recipe

Summary: Fruit salad with cheese is one of my personal favourite combinations. It might sound unusual, but give it a try, and you will be surprised at how well it works. I love my fruit salads with cheese at any time of the day, from breakfast to a light lunch to a refreshing Summer starter to a post-workout snack to even dessert. A sure winner with children too. Again, putting pepper on fruits might sound odd, but the pepper really brings out the sweetness of the fruits and wonderfully rounds off the different flavours. This one is a summer incarnation, when stone fruits are plentiful. Use any combination of plums, apricots, nectarines, peaches and cherries. I used the juice of half a blood orange to marinate the fruits in because I had one (the last of the season), but regular orange is great too. Thyme just goes really well with goats cheese, but basil works great too. The key is to use perfectly ripe fruits, as they will be deliciously sweet ; halving and pitting the cherries takes a bit of time, but it is well worth the effort, believe me ! Leave a few cherries whole for decoration. For a Vegan and Paleo version, replace the goat cheese with soaked almonds.

Vegetarian Cherry Tomato, Mozzarella And Fig Salad Recipe

Summary: Take the popular caprese salad, an Italian favourite : tomato, mozzarella and basil salad, seasoned with salt and olive oil. Swap full size tomatoes for deliciously ripe cherry tomatoes. Add heavenly sweet, fresh, perfectly ripe figs, and serve on a giant bed of shredded lettuce, dressed in olive oil and balsamic vinegar. What you get a satisfying salad lunch for a bright Summer day. Use real buffalo mozzarella if you can, it is so much tastier than mozzarella made with cows milk !
