About Green Whole Cardamom

Cardamom has a unique flavour and aroma that is hard to put into words. It defies the boundaries of normal sensory comparisons. It is compellingly strong, yet delicate; sweet, yet powerful; with an almost eucalyptus freshness.

Cardamom is used in different ways by different cultures, in the Middle East to flavour coffee, in Scandinavian communities as a dessert baking spice. In India it is a savoury spice for curries. Elsewhere it is used for poached fish, meat loaf, fish stews and sweet potatoes.

Try grinding these up and adding just a small amount to stewed apple topped with pie crust or crumble for a really unique dessert. I have served it with great sucess at several dinner parties.

Summary: Oh, how I wish you could taste this ! Roasted Jersey Royal potatoes, pear wedges simply poached in water and spices, Roquefort, with mixed salad leaves lightly dressed in a garlic mustard dressing. Feel free to use another blue cheese, if you can't get Roquefort. When poaching fruit, sugar is usually added to the poaching liquid, but I find this isn't necessary. I just leave the sugar out, and the fruits show case their natural sweetness. The flavours in this salad just go so well together ! Serves 2 as a main or 4 as a starter.
