About Whole Cumin Seeds

The dried fruit of an annual plant related to parsley and indigenous to the upper Nile, Cumin has a warm, spicy taste, with a biting edge, similar to caraway. But Cumin is earthy rather than sweet, like caraway, and extremely aromatic.

Cumin, either whole or ground, features in most Indian savoury mixtures and curry seasonings and is also an important ingredient of Garam Masala. For a change of pace, try ground Cumin added to tangy lime or lemon based marinades. Or, add Cumin to chilli, spicy stews, barbecue marinades, and sauces. Heat Cumin and garlic in olive oil and drizzle over cooked vegetables or potatoes. Cumin seeds, rather than ground Cumin, will retain their potency for extended periods of time.

I really like being able to buy these whole cumin seeds in smaller or larger quantities asa required. I prefer grinding them as I need them rather than buying them already ground.

Red Kidney Beans Indian Curry or Rajma Masala Recipe

Summary: This is the Indian cousin of your favourite spicy chilli : red kidney beans are stewed in fresh or canned tomatoes, seasoned with onion, garlic, fresh ginger, fresh chillies and Indian spices. Asafoetida, also known as Hing, is an extremely pungent spice extracted from a sort of giant fennel, frequently used in Indian cuisine. Asafoetida's strong, off-putting, rotting garlic smell disappears during cooking to deliver a delicious savouriness. I truly believe it is the secret ingredient here : I had made many decent rajma masalas over the years, but it is not until I started adding a pinch of asafoetida, that I found rajma masala perfection. So although optional, do include asafoetida if you can get hold of it.
