Vegetarian Savoy Cabbage Omelette Recipe

This thick vegetable-rich omelette is packed with cruciferous goodness. Great as a quick, nutritious lunch, or serve with a green salad for a healthy meal. Unlike white cabbage, Savoy Cabbage actually tastes really sweet.

You will need

2 sundried tomatoes in extra virgin olive oil, plus 1 Tbsp of the oil More products
1/2 Savoy Cabbage head, shredded More products

1 tsp crushed chillies, optional More products

Method

  • Heat the sun-dried tomato oil or regular olive oil on medium heat. Beat the eggs with the chilli flakes, if using. Season with sea salt and black pepper if you wish.
  • Add the sliced onions and cook until translucent. Add the sun-dried tomatoes, chopped, and the garlic, crushed. Cook for about a minute and add the shredded Savoy cabbage.
  • Cook, stirring occasionally, for about 10 minutes, or until the cabbage has softened.
  • Pour the eggs over the cabbage and cook for around 3 minutes or until set. Flip and cook on the other side until lightly browned.
  • Serve with a green salad.
