About Organic Savoy Cabbage
One of the best cooking cabbages, Savoy cabbage has distinctive wrinkled leaves and a loose head. It is a dark green colour and a mild flavour. Savoy cabbage in particular-turns out to be an especially good source of sinigrin. This isothiocyanate compound has shown unique cancer preventive properties with respect to bladder cancer, colon cancer, and prostate cancer.
Whilst researchers have shown that different types of cabbage (red, green, and Savoy) contain different patterns of antioxidants, there is no doubt that all varieties contain a superb array of vitamins, minerals and more recently understood antioxidants and phytonutrients. I have never been a great fan of cabbage and used to only eat it because I knew it was good for me. Then I tried the cabbage omelette recipe recipe and the stuffed cabbage recipes from this site and cabbage became my new favourite vegetable!
