High Protein Vegan Puy Lentil and Smoked Tofu Casserole Recipe

Le Puy Lentil are dark green lentils from France which are renowned for their flavour and the fact that they hold their shape during cooking. They are the only lentils in the world to have a Protected Designation of Origin, as they are only grown in the Le Puy region in France. Le Puy lentils go really well with smoky flavours, and this Vegan Puy Lentil and Smoked Tofu Casserole is truly a delicious combination, perfect for a high protein dinner that could also double up as a lunch box

You will need

1/2 cup or 100g Puy lentils More products
2 Tbsp Olive oil More products
1/2 red onion, chopped OR More products
1 shallot, chopped More products
2 cloves garlic, crushed More products
2 small or 1 large tomato, chopped

1/2 tsp sea salt or to taste, ideally smoked sea salt More products
freshly ground black pepper, to taste More products
1 1/2 cup water or more, as needed
1 block smoked tofu

Method

  • Heat the olive oil in a medium saucepan. Add the chopped onion or shallot and fry over medium heat until translucent.
  • Add the crushed garlic and the chopped tomato and stir fry for about 5 minutes.
  • Season with salt and pepper, and add the lentils, the water and the cubed smoked tofu.
  • Cover and cook over medium heat until the water has been absorbed and the lentils are soft, adding more water if needed.
  • Enjoy either hot or cold, and garnished with chopped fresh parsley if you wish.
