Stuffed Peppers

Treat yourself and your friends or family to this simple yet tasty starter or light lunch with just 4 main ingredients, bell pepper, onion and chickpeas and tomatoes.

You will need

2 red bell peppers More products
1 tbsp olive oil More products
2 onions, chopped More products
4 cloves garlic More products
400g tin chickpeas, rinsed well and drained More products
a few fresh sage leaves, chopped This item is only available in our high street shops. More products
4 ripe tomatoes, chopped More products
2 tbsp dried mixed herbs More products

  • Halve the bell peppers lengthwise.
  • Heat the oil and add the onions and garlic, cover and cook on low heat for a few minutes, until translucent.
  • Put 2 thirds of the cooked onion in a bowl, add the chickpeas and the sage. Mash roughly and stuff the peppers with this mixture.
  • Put the stuffed peppers in a heatproof dish, mix the rest of the onion and garlic with the tomatoes and herbs. Pour this around the peppers.
  • Bake for about half an hour, at 200C or Gas Mark 6, basting frequently to prevent the peppers from drying out.
  • Serve straight out of the oven with a side salad and some crusty bread.
