Method

  • For the pancakes, place the eggs and soya milk into a bowl and whisk to combine.
  • Add the flour and baking powder and whisk thoroughly to form a smooth batter.
  • Heat a frying pan until hot then add the sunflower oil and a large spoonful of the pancake mix.
  • Fry over a medium heat until golden brown underneath and little bubbles have started to appear on the surface.
  • Turn the pancake over and cook for a further 1-2 minutes, or until cooked through and golden brown.
  • Set aside and repeat with the remaining batter.
  • For the apples, heat a frying pan until hot and add the apple and pear chunks.
  • Fry for 2-3 minutes, then add the honey and water and bring to a boil.
  • Stir the apples and pears to ensure even coating in the liquid, then add the walnuts.
  • For the syrup, place the vanilla pod, sugar and water into a saucepan and bring to the boil.
  • Reduce the heat slightly and simmer until thickened.
  • To serve, place the pancakes in a stack in the centre of a plate.
  • Spoon the apple and pear mixture around and drizzle over the syrup.
