Salad leaf soup

Salad leaves are an ideal way to get Vitamins A and C and many essential minerals.

1 potato peeled and diced

250g mixed salad leaves

400ml water
sea salt More products
freshly ground pepper More products

Method

  • Sweat the onion in the butter for 5 mins until soft and not coloured.
  • Add the potato and 100ml of water and simmer for approx 10 mins.
  • Add the salad leaves and the remaining water and cook for a further 5 mins.
  • Liquidise until smooth and add salt and pepper to taste.
  • Serve hot or chilled.
  • Garnish with a swirl of olive oil.
