Method

  • To begin, juice the beetroots, lemon and ginger. Pour the juice into your blender jug, add the tomatoes and bell pepper and blend until smooth. If required, you may add a little filtered water to reach your desired consistency.
  • Pour into 2 pretty glasses and enjoy.
  • If you prefer a raw savoury soup, add a pinch of salt, blend again, and serve in soup bowls, topped with chopped fresh herbs.
