Raw Vegan Red Smoothie Soup Recipe

This one is a very interesting number, as it can either be a smoothie or a raw soup. See, it took quite a long time to dawn on me that raw soups are actually nothing but savoury smoothies ! Add a pinch of salt and some fresh herbs for a very savoury soup ...

1 organic lemon More products
a 1inch or 2,5cm piece fresh organic ginger root More products
2 ripe organic tomatoes

Method

  • To begin, juice the beetroots, lemon and ginger. Pour the juice into your blender jug, add the tomatoes and bell pepper and blend until smooth. If required, you may add a little filtered water to reach your desired consistency.
  • Pour into 2 pretty glasses and enjoy.
  • If you prefer a raw savoury soup, add a pinch of salt, blend again, and serve in soup bowls, topped with chopped fresh herbs.
