Raw Vegan Gluten Free Amaretti Biscuit Recipe

If you love amaretti like I do, but are worried by the amount of sugar they contain, try these raw amaretti, you will be surprised at how similar to the baked ones they taste. Even better, some say !

You will need

IngredientAdd
1 cup or about 100g almonds OR More products
1 cup or about 100g ground almonds More products
1 tbsp apricot kernels More products
1 tbsp good quality almond extract (optional) More products
1/4 tsp pink Himalayan crystal salt OR More products
1/4 tsp sea salt More products
1 tbsp coconut palm sugar More products
1 tbsp agave syrup OR More products
1 tbsp honey More products
1 tbsp water or as needed

Method

  • If using whole almonds, start by grinding the almonds.
  • Then put all dry ingredients in a bowl and mix with your hands, as if you were kneading dough.
  • Add the liquid ingredients : agave or honey, almond extract if using and water.
  • Mix until you get a crumbly dough, adding more water if needed.
  • Use an ice-cream scoop to shape the amaretti.
  • Eat as is, or dehydrate for a few hours at 42 degres C.
