Protein Paleo Pumpkin Pancakes Recipe

These paleo pumpkin pancakes deliver a serious protein boost : almond flour, coconut flour, protein powder and egg whites ! It might seem like hard work to assemble the long list of ingredients, but the result is well worth it, and you will be surprised at how fast and easy it is to make these, and the variety of ingredients delivers variety of nutrition !

2 Tbsp or 20g plain or vanilla flavoured protein powder

1/2 cup or 110g pumpkin puree (no added sugar, shop-bought or made from steamed pumpkin flesh) More products
6 egg whites Available only in our Edinburgh shops More products
1 tsp vanilla extract More products

Method

  • Mix all dry ingredients (ground almonds, coconut flour, protein powder, cinnamon, mixed spice, bicarbonate of soda and salt) in a mixing bowl.
  • In a separate bowl, mix the pumpkin puree, egg whites and vanilla extract.
  • Add the pumpkin mixture to the dry ingredients and mix until well combined.
  • Heat a frying pan over medium to high heat. Lightly grease the pan with coconut oil and cook about 1 heaped tablespoon pancake batter at a time, slightly pressing down with the back of spoon to get a pancake size and shape. Cook for about 3 minutes, then carefully flip and cook on the other side for another 2 minutes or so.
  • Serve warm, drizzled with honey or your favourite liquid sweetener and sprinkled with pumpkin seeds and desiccated coconut, if you wish.
