Potato Gnocchi

A simple but tasty way to do something different with potatoes

650g potatoes, peel and chop into chunks

1/2 tsp baking powder More products
1 1/2 tsp olive oil More products
sea salt More products
ground pepper More products

Method

  • Fill saucepan with cold salted water and add potato chunks.
  • Bring to the boil and cook until tender - around 20/25 minutes.
  • When cooked, drain then return to pan and mash until smooth.
  • Add the remaining ingredients to the mashed potatoes and blend together until dough formed.
  • Place on a lightly floured board and knead the dough until smooth. Sprinkle with extra flour if necessary to stop sticking.
  • Roll pieces of dough, the size of a small tomato, into balls until all the dough is used.
  • Then use a fork to flatten and create a ridged pattern on each dough ball.
  • Fold dough in half keeping ridges on the outside creating gnocchi.
  • Add gnocchi to pan of salted boiling water.  Be careful not to put too many in at one time.
  • When cooked (couple of mins), gnocchi will float to top and should be removed.
  • Drain well and serve.
  • Gnocchi should be served with sauce of your choice.
