Polenta with Roasted Vegetables

A substantial supper dish which would look good to serve at a dinner party.

You will need

350g bag of polenta More products
150ml olive oil More products
2 red peppers More products
2 red onions More products
250g asparagus

  • Pre heat your oven to 180 degrees.
  • Prepare the polenta according to the pack instructions.
  • Spread the cooked polenta onto a greased or lined tray, 1cm thick.
  • Allow to cool, and cut into triangles.
  • Chop the onion, peppers and asparagus into chunks.
  • Peel the garlic cloves, but leave them whole.
  • Place all the vegetables in a shallow baking tin, and coat with olive oil.
  • Place in the oven and cook for 30 minutes, stirring occasionally.
  • Heat some olive oil in a griddle pan.
  • Fry the polenta triangles on both sides for 3-4 minutes.
  • Slice the smoked tofu.
  • Pre heat your grill and place the cooked polenta triangles onto a tray.
  • Remove the cooked vegetables from the oven.
  • Top the triangles with vegetables and sliced tofu and brown under the grill.
  • Top with black pepper, basil leaves and a drizzle of olive oil.
