You will need

2 medium onions peeled and finely diced More products
3 tbsp olive oil More products
1 x 450g frozen peas
2 eating apples cored, skin left on and chopped This item is only available in our high street shops. More products
55g mint - thick stalks removed (keep 6 leaves for garnish) This item is only available in our high street shops. More products
850ml vegetable stock made up with boiling water More products
1/2 tsp sea salt More products
a good few grinds of pepper More products
a good grating of nutmeg More products
juice of half a freshly squeezed lemon More products
For garnish: 6 mint leaves

  • Heat the olive oil in a large saucepan.
  • Fry the diced onions for several minutes, stirring occasionally, until they are completely soft.
  • Add the chopped apples and peas to the saucepan. Peas can be thawed or still frozen.
  • Pour in the stock and simmer gently for 5 minutes.
  • Add 28g of the fresh mint pushing it down in the hot stock. Cool the soup and liquidise adding the remaining mint.
  • Add the salt, pepper, nutmeg and lemon juice. Taste adding more salt if required.
  • Soup can be served hot or cold.
  • Garnish each bowl with a mint leaf.
