Method

Melt the butter in a pan, add the onion and parsley and fry gently until soft.
Sprinkle over the flour and cook stirring for 1-2 mins.
Gradually add the milk, little by little, stirring all the time.
Continue to cook until the sauce thickens.
Add the remaining ingredients and mix well.
Cool slightly.
Preheat the grill to high.
Divide the mixture into 8 portions and with floured hands form each portion into a ball, then flatten with the palm of your hand to form burgers.
Place under the grill and cook for 4 mins on each side
Serve hot.
