Mushroom Risotto 2

You will need

200g risotto rice More products
2 tbsp olive oil More products
1 onion More products
1 red pepper More products
1 green pepper More products
250g mushrooms More products
750ml gluten free vegetable stock More products
2tsp oregano More products
black pepper More products

  • Gently heat the rice in the olive oil in a heavy bottomed pan for 2-3 minutes, till the rice looks translucent.
  • Chop the onion, peppers and mushrooms and add to the rice.
  • Cook for a further 5 minutes, stirring frequently.
  • Add the vegetable stock and bring to the boil.
  • Turn down the heat and simmer for 25 minutes, adding water if necessary to ensure the mix does not dry out.
  • When the rice is cooked, add the oregano and black pepper.
  • Serve with a mixed salad and a chilled Organic White Wine.
