Lemon Pudding

1 large lemon (ideally organic, or at the very least unwaxed)

small piece of root ginger (to make 2 tsp minced ginger) More products
1/2 tsp lucuma powder More products
1/4 tsp ground cinnamon More products

Method

  • Remove the skin and stone from the mango.
  • Zest the lemon and then use a knife to remove the white skin.
  • Cut the lemon in half and remove the pips.
  • You need the zest and the lemon flesh but not the white skin.
  • Core the apple.
  • Chop the dates and discard the stones.
  • Mince the ginger in the seed grinder to get 2 tsp minced ginger.
  • Put everything in the blender and blend on a high speed setting until it is all finely mixed.
  • Serve fresh and yummy. This looks great served in ramekin dishes and decorated with a fresh orange slice.
