Indian Style Lentils

Combine this tasty lentil dish with rice for a hearty vegetarian meal. It will provide you with a complete protein as well as many health-promoting nutrients.

You will need

1 medium size onion, diced More products
1 tbsp vegetable broth
2 cloves garlic, minced More products
1 tsp ginger More products
1/2 tsp turmeric More products
1/2 tsp salt More products
1 cup canned diced tomatoes More products
2 cups canned OR More products
2 cups home-cooked lentils More products
1 cup frozen spinach Available only in our Edinburgh shops More products

  • Dice onions and mince garlic and allow this to sit for at least 5 minutes to bring out their hidden health benefits and increase in flavour and pungency.
  • Saute the onion in 1 tbsp broth for 3 minutes.
  • Add garlic, ginger, turmeric, salt, tomatoes and lentils.
  • Simmer covered for 5-7 minutes.
  • Add 1 cup frozen spinach and continue simmering for 2 more minutes.
