Honey Tea Loaf

This tea loaf is surprisingly easy to make, and will delight children and grown-ups alike. Served with tea, it will be very much appreciated during cold afternoons over the Christmas holiday.

You will need

225g (8oz) raisins OR More products
225g (8oz) mixed vine fruit with peel OR More products
225g (8oz) mixed vine fruit without peel, as per your preference More products
75g (3oz) set honey More products
300ml (½pt) freshly made strong tea More products
2 eggs, lightly beaten Available only in our Broughton Street shop More products
275g (10oz) whole-wheat flour More products
2.5ml (½tsp) ground mixed spice More products
15ml (1tbsp) baking powder More products

Method

  • Place the raisins in a bowl.
  • Stir the honey into the tea and pour this over raisins.
  • Leave to soak for 2 hours or overnight, if you have the time.
  • Stir the eggs into the raisin mixture.
  • Pre-heat oven to 180oC, 350oF, Gas Mark 4.
  • Mix the flour with the spice and baking powder then mix these dry ingredients into the raisin mixture
  • Transfer to a greased 900g (2lb) loaf tin and bake for about an hour.
  • Cook on a wire rack and serve sliced and buttered if you like.
