Vegetarian Fruity Quinoa Recipe

This simple quinoa dish, with plump and sweet dried fruits, makes a great base for a salad or a lovely side for a Christmas meal.

You will need

1 red onion, chopped More products
2 cups or 350g quinoa tricolore OR More products
2 cups quinoa More products
4 cups or 1 litre water or homemade vegetable stock
1 vegetable stock pot, optional More products
Half a cup or 100g mixed vine fruit More products
1 bunch fresh parsley, chopped More products

Method

  • Put your chosen quinoa in a fine sieve and thoroughly rinse it under running cold water.
  • In a medium size saucepan, heat the olive oil, add the onions and fry gently until they become transluscent.
  • Add the drained quinoa and fry for a few minutes, stirring continuously.
  • Add the homemade vegetable stock or the water and the stock pot if using and the mixed vine fruit and cook for about 15 minutes or until all the liquid is absorbed.
  • Allow to rest covered for at least 5 minutes before fluffing with a fork.
  • Serve topped with the parsley.
