Vegetarian Cherry Tomato, Mozzarella And Fig Salad Recipe

Take the popular caprese salad, an Italian favourite : tomato, mozzarella and basil salad, seasoned with salt and olive oil. Swap full size tomatoes for deliciously ripe cherry tomatoes. Add heavenly sweet, fresh, perfectly ripe figs, and serve on a giant bed of shredded lettuce, dressed in olive oil and balsamic vinegar. What you get a satisfying salad lunch for a bright Summer day. Use real buffalo mozzarella if you can, it is so much tastier than mozzarella made with cows milk !

about 150g cherry tomatoes, halved

Method

  • Wash and dry your salad, then roughly shred it. In a small bowl, mix the olive oil and the balsamic vinegar, toss the lettuce to coat.
  • Top with the halved cherry tomatoes, sliced or roughly torn mozzarella and fig wedges. Top with China Rose radish sprouts if you wish, and season with freshly ground pepper to taste.
