Ingredients: 1 large red cabbage head, about 1 kilo; 2 red onions; 50g salted butter; 50g Jumbo Black Flame Raisins; 50g whole hazelnuts or cobnuts; 1/4 cup or 60ml water; 1 tsp ground mixed spice (coriander, cinnamon, fennel, ginger, caraway, cloves, nutmeg, pimento).; 4 cloves garlic, crushed; Freshly ground black pepper, to taste

This is a lovely side dish for a Christmas dinner or any cold night. It is easy to make, yet so tasty everybody will love it, even children, thanks to the addition of nuts and raisins.

1 tsp ground mixed spice (coriander, cinnamon, fennel, ginger, caraway, cloves, nutmeg, pimento).		More products
4 cloves garlic, crushed		More products
Freshly ground black pepper, to taste

Method

Slice the onions and shred the cabbage thin, discarding the tough core.
Melt half the butter in a large saucepan and cook the onions for a few minutes, stirring continuously.
Add the cabbage and stir well, to coat it with the butter.
Add the Thompson raisins, the hazelnuts, the mixed spice and the water and cook, covered, for about 10 minutes or until the water has evaporated.
Finally, add the remaining butter and the crushed garlic. Season with freshly ground black pepper and serve with a nut roast, for example.
