Basic 4 Ingredients Soup Recipe

This basic 4 ingredients soup recipe really is the easiest soup in the history of soups. All you have to do is literally put the 4 ingredients in a pan, add enough water to cover generously, add some herbs and freshly ground black pepper if you wish, and cook until soft. This soup is vegan, grain-free, gluten-free, oil-free, salt-free, nut-free. The magic of this soup is that you can substitute the potatoes or the carrots for what ever vegetables are in season, or more accurately, what ever you have in your fridge.

You will need

1kg organic potatoes of your choice, peeled or not, cut into 1 inch (about 2,5cm) cubes

500g organic carrots, again peeled or not, sliced into medium rings More products
1 large onion, finely chopped (by hand or in a food processor) More products
2 cloves garlic, crushed More products
4 cups or 1 litre filtered water
freshly ground black pepper to taste, optional More products
a few fresh or dried bay leaves, optional More products
a little fresh or dried thyme, optional More products

Method

  • Put the potato cubes, carrot slices, chopped onion and crushed garlic in a saucepan. Add the water, and if you wish, some freshly ground black pepper and herbs.
  • Cook over medium to high heat until the potatoes are cooked, adding more water if you prefer a broth-like soup.
  • This basic soup keeps well for a couple of days in the fridge, and can be frozen in portions for even quicker dinners.
