Chickpeas and Cherry Tomatoes Salad with Garlicky Dressing Recipe

So easy to put together this simple salad. Only 5 ingredients : chickpeas, cherry tomatoes, olive oil, lemon juice and garlic which most of us have in the kitchen cupboard and fridge. Eat on its own or serve with warmed pitta bread or toasted sourdough. Will keep in fridge.

You will need

1 cup or 200g chickpeas, soaked overnight OR More products
2 jars cooked chickpeas More products
250g cherry tomatoes This item is only available in our high street shops. More products
4 tbsp extra virgin olive oil More products
1 large lemon, juiced More products
4 garlic cloves, crushed More products

Method

  • If using dry pre-soaked chickeas, put them in a saucepan with 2 cups (500ml) water. Bring to the boil, lower the heat and cook gently for about 20 minutes or until the lentils are soft. Put aside.
  • If using jarred chickpeas, simply rinse and drain them well and put aside.
  • Halve the cherry tomatoes, put aside.
  • Whisk the olive oil, lemon juice and garlic together in a large bowl. Season with sea salt and freshly ground black pepper if you wish.
  • Add the chickpeas and the cherry tomatoes and mix thoroughly.
  • Enjoy as is or with a piece of pitta bread.
