Camp fire Orange Coconut Cake

1 330ml can coconut water More products
1 orange, juiced More products
1 lime, juiced, optional More products
2 tbsp coconut oil More products
1 cup gluten free ready to mix cake mix

Method

  • Boil down the coconut water to one third of its original volume. Take off the heat and allow to cool for a few minutes.
  • Squeeze in the orange and lime (if using) juice and the coconut oil.
  • Slowly stir in the cake mix and the desiccated coconut.
  • Cook over the lowest possible heat for about 10 minutes or until the blabe of a knife inserted in the centre of the cake comes out clean.
  • Allow to cool for a few minutes, then enjoy straight from the pan.
