You will need

1/2 400g can of flageolet beans, rinsed and drained More products
400g tin plum tomatoes and juice More products
bunch of spring onions, tips only chopped This item is only available in our high street shops. More products
1/2 326g jar sweetcorn drained and rinsed More products
knob of butter This item is only available in our high street shops. More products
1 clove of garlic finely chopped More products
salt More products
ground pepper More products
1 tbsp chopped fresh parsley This item is only available in our high street shops. More products

Method

  • Melt the butter in a saucepan over a medium heat.
  • Add the spring onions and saute for one minute.
  • Add the tomatoes, sweetcorn, beans and garlic, bring to the boil and reduce this to a simmer for approx 5 mins to thicken.
  • Season to taste.
  • Pour into bowls and add chopped parsley.
  • This can be served with a fresh green salad or green veg.
