You will need

Method

Melt the butter in a saucepan over a medium heat.
Add the spring onions and saute for one minute.
Add the tomatoes, sweetcorn, beans and garlic, bring to the boil and reduce this to a simmer for approx 5 mins to thicken.
Season to taste.
Pour into bowls and add chopped parsley.
This can be served with a fresh green salad or green veg.
