Black Beans con Queso Bean Dip

A classic and indulgent vegetarian bean dip recipe with black beans and lots of cheddar cheese.

1 large onion, finely chopped More products
2 garlic cloves, crushed More products
50g all purpose flour More products
2 cups or 500ml of milk Available only in our Edinburgh shops More products
400g cheddar cheese, shredded Available only in our Edinburgh shops More products
2 400g tins black beans, rinsed and drained More products
1 green chilli, chopped

  • Melt butter in a large pan over a medium heat; add onion and sautee for 5 minutes.
  • Add garlic and sautee for 5 more minutes or until the onion is tender.
  • Stir in the flour and stir until smooth; cook mixture, stirring constantly, for 1 minute.
  • Gradually add milk, stirring constantly, until thickened.
  • Add the cheese, stirring constantly over low heat until the cheese melts.
  • Stir in black beans, green chilli, worcester sauce and chilli powder, gently stirring until mixture is thoroughly heated.
  • Serve warm with chips or crackers.
