About Organic Lord Derby Cooker Apples
Lord Derby Organic Cooker Apples are a green/yellow apple with a sharp flavour and firm flesh. The Victorian author Hogg rated Lord Derby as an "excellent culinary apple". The flavour is nicely acidic if picked young, but milder if picked when fully ripe (at which point the skin develops a more yellow hue).

Apples are excellent for providing dietary fibre and provide good amounts of trace minerals and vitamins along with a decent amount of vitamin C. This apple is an excellent cooker and is particularly good in crumbles, providing a tart sharpness to soften the wetness of pies and crumbles. Although usually considered a cooking apple, many Lord Derby enthusiasts regard it as an excellent sharp eating apple too.

A great variety for baking with - it makes a lovely sharp apple sauce for serving with savoury dishes. With the addition of a small amount of brown sugar and a handful of raisins they are brilliant for apple desserts of any kind too.
