About Organic Porta Bella Mushrooms UK

Porta Bellas, (also known as Portobello) like other mushrooms are virtually free of fat and sodium, provide essential fibre and contain no cholesterol. They are the mature version of crimini or brown mushrooms. One medium cap (about 4 ounces) has only 40 calories. They contribute a wide range of essential amino acids, are low in fat (0.3 - 2.0%), high in fibre and provide several groups of vitamins, particularly thiamine, riboflavin, niacin, biotin, and ascorbic acid. While nutrients vary from one kind of mushroom to the next, many contain protein, vitamins A and C, B-vitamins and minerals including iron, selenium, potassium and phosphorus. Phytochemicals found in some mushrooms are being studied as possible cancer-fighting substances, according to the American Institute for Cancer Research.

They are lovely grilled (try one with a poached egg popped in it for an impressive and tasty brunch.) Try roasting them with a little oil in a medium grill for around 20 minutes (gill side down). Or sauté them for 5-6 minutes with a little garlic and pepper.

Thoroughly recommended - much tastier than any I can get locally, didn't suffer from the overnight journey at all, just perfect, will definitely buy again.

I served these portobello mushrooms with a poached egg inside at breakfast to my in-laws the first time they came to stay - gave me lots of brownie points!

Sublime Faux Gras : a Vegan Alternative to Foie Gras Recipe

Summary: Who knew that a mixture of onion, mushrooms, green lentils, nuts, beetroot, fresh herbs and lemon juice could produce such an incredibly delicious and realistic alternative to one of the most controversial yet popular French delicacies, Foie Gras ? Enter Faux Gras. This Mushroom and Lentil pâté tastes very much like real Foie Gras, but is brimming with plant-based nutrition, and more importantly, comes without the unkind treatment to ducks and geese. But this Faux Gras is not just a vegan alternative to Foie Gras, it is also an exceptionally tasty vegan spread in its own right : it is hands down the best pâté, vegan or otherwise, that I have ever tasted. Don't be put off by the fairly long list of ingredients, the recipe is actually really easy and straightforward.

Gluten Free Vietnamese Omelette Rolls Recipe

Summary: These open omelette rolls were inspired by Vietnamese bank khoai, which are pancakes made with rice flour, soda water and turmeric, and filled with a variety of fillings usually including eggs, and other non vegetarian fillings. To make them more protein based than carbs based, I leave out the rice flour altogether and beat the eggs like for an omelette, with some turmeric. To make them more similar to the traditional Vietnamese pancakes, just add a little rice flour. I serve them on a salad leaf, filled with cooked onions and protein-rich portobello mushrooms, cucumber and lots of fresh coriander. Serves 4 as a starter or a snack, or 2 as a main. Great with kids, as they enjoy assembling their own. Would also work a treat in a lunchbox or for a picnic, if you pack the salad, the omelette and the fillings separately until ready to eat.
