Wild Rice Tomato And Feta Salad Recipe

Rice salad is great way to use leftover cooked rice or you can use freshly cooked rice too. The combinations for nutritious and filling rice salad lunches are endless. This one uses wild rice, which is not actually rice but a seed and moist sun dried tomatoes.

You will need

100g wild rice More products
2 cups or 500 ml water
a dozen pieces of semi dried sun dried tomatoes in olive oil, roughly chopped More products
2 garlic cloves, crushed More products
100g feta cheese, crumbled Available only in our Edinburgh shops More products

Method

  • Put the wild rice in a saucepan with the water and bring to the boil. Lower heat and cook until the wild rice is soft and cracks open, add more water if necessary.
  • Once cooked, transfer the wild rice to a bowl. Add the sun dried tomatoes, the crushed garlic and a little oil from the sun dried tomatoes jar.
  • Mix in the feta and serve.
