Dairy Free Christmas Pudding Ice Cream Recipe

Ice cream on Christmas Day : This recipe is free from: wheat, gluten, egg and nuts free. Use soy yoghurt and oat or rice cream to make it dairy free, or coconut yoghurt and oat or rice cream to make it dairy free and soy free. Choose your favourite dried fruits such as sultanas, raisins, currants, cherries, chopped crystallised ginger, mixed peel, prunes, apricots, figs or anything else that you fancy. For an alcohol free Christmas Pudding Ice Cream, use grape juice, orange juice or your favourite fruit juice instead.

Method

  • Please note ice-cream maker required plus minimum couple of hours preparation time
  • Place spices in alcohol for around 45 minutes to infuse.
  • Soak the fruits in the infused liquid for a couple of hours or even overnight.
  • Blend together yoghurt, cream and honey.
  • Spoon mixture over soaked fruits and gently blend together.
  • Place mixture into ice cream maker and set to churn at freeze for around 20/30 minutes.
  • When ice cream has set, place in a small bowl, smooth ice cream flat and cover before freezing.
  • When serving, release ice cream by placing bowl briefly in tepid water before turning out.
  • Ice cream can be served on its own or with fresh or baked fruits.
