You will need

4 large tomatoes or 5 medium sized ones, cut into thick slices

  • In a large mixing bowl, combine the tomato, onion, bell pepper, garlic cloves, chilli if using. Add the cumin and smoked paprika. Toss with the olive oil to make sure everything is well combined. Season with salt and black pepper to taste.
  • Transfer all the vegetables to a baking tray and roast for about 25 minutes.
  • Peel the garlic cloves and pop everything in the blender. Add the hard cheese, stock cube and water and blend until smooth. Adjust seasoning and serve in a warm bowl.
