Roasted tomato soup

Ingredients: 4 large tomatoes or 5 medium sized ones, cut into thick slices; 1 red onion, cut into thick slices; 2 red bell pepper, deseeded and quartered; half a red chilli, optional; 4 garlic cloves, skins on; 1 tsp smoked paprika; 2 tbsp cumin seeds; 1 tomato and herb vegetable stock cube; 2 cups or 500ml water; 100g grated hard cheese, plus extra for garnish; 4 tbsp olive oil; sea salt and freshly crushed black pepper to taste

Roasting the tomatoes for this soup will really give it the most intense tomato flavour.

Method

In a large mixing bowl, combine the tomato, onion, bell pepper, garlic cloves, chilli if using. Add the cumin and smoked paprika. Toss with the olive oil to make sure everything is well combined. Season with salt and black pepper to taste.
Transfer all the vegetables to a baking tray and roast for about 25 minutes.
Peel the garlic cloves and pop everything in the blender. Add the hard cheese, stock cube and water and blend until smooth. Adjust seasoning and serve in a warm bowl.
