Raspberry tofu dessert

You will need

225g fresh raspberries OR

Awaiting stock

225g frozen raspberries Available only in our Edinburgh shops More products
1 packet firm silken tofu

1/2 tsp vanilla essence More products
2 tbsp honey More products

  • If using frozen raspberries, these must be thawed and retain a few for topping.
  • Combine all the ingredients and press through a sieve to remove the raspberry seeds.
  • This is made easier if first processed in a liquidiser or food processor.
  • Divide the mixture between four dessert dishes and chill for up to 2 hours.
  • Garnish with the raspberries which have been kept behind and serve.
