Put a spring in your step soup

After doing a good job at removing the weeds in your garden, reward your self with a simple onion and potato soup upgraded with spring nettles. Spring nettles are very tender. Nip about 5 inches off, and good luck with being stung, as it is a great tonic for the nervous system.

Method

  • Chop the onion and potato, and fry them in a little coconut oil on a low heat until the potato softens a little.
  • Add the nettles and fry a bit.
  • Add enough filtered water to cover and a bit more and leave to simmer until the potatoes are soft.
  • Once cooked whizz in the blender or with an immersion blender.
  • When serving add coconut oil, Braggs to taste and a pinch of cayenne pepper.
  • You can feel the goodness.
