Gluten Free Cheese And Chilli Scones Recipe

These classic savoury cheese scones with a kick from the chilli pepper are quick and easy to whip up. Instead of cheddar you could also use other hard cheeses such as parmesan or manchego for variety. Enjoy them at their best by serving them just slightly warm with some butter.

300ml full fat milk

Method

  • To start, heat the oven to 220C/425F/Gas 7.
  • Lightly grease a baking sheet with a little butter or vegetable oil.
  • Combine the flour, baking powder and salt and rub in the butter with fingertips until the mixture resembles breadcrumbs.
  • Stir in the cheese, followed by 1 chopped chilli pepper for a milder spicy flavour or 2 chilli peppers if you prefer a stronger spicy flavour.
  • Stir in the milk until mixture forms a soft dough.
  • Knead very lightly on a floured surface.
  • Pat the dough into a round 2.5 cm deep and, using a 4 cm cutter, cut dough into rounds.
  • Place rounds onto the greased baking sheet and brush tops with a drop of milk to aid browning.
  • Place in middle of oven and bake for no more than 15 mins until risen and golden.
  • Cool on rack before tasting.
