Fast chocolate and nut cake

You will need

100g butter Available only in our Edinburgh shops More products
400g dark chocolate More products
50g sugar More products
½ tsp cinnamon More products
200g macaroons OR
200g coconut biscuits, broken into pieces More products
100g Brazil nuts , roughly chopped More products
desiccated coconut , to serve More products

  • Line a 900g loaf tin with a double layer of cling film.
  • Melt the butter, chocolate and sugar  in a bowl set over a pan of simmering water over a low heat.
  • Into this mixture stir the cinnamon, macaroons or the coconut biscuits and nuts.
  • Pour the mixture into the prepared tin, smooth over the surface with a knife and cover completely with cling film.
  • Leave in the fridge to set for 2 hrs at least.
  • To serve, set on a plate, remove cling film and sprinkle with the desiccated coconut.
  • The cake is fairly rich, so slice into thin pieces and serve with fresh fruit or ice cream if you like.
  • Alternatively you can reduce the sugar by as much as you like, or reduce some of  butter.
