You will need

1 large carrot More products
2 small spring onions

  • Peel the carrot, then either grate or cut very fine slices.
  • Top and tail the spring onions and finely chop.
  • Slice the cheddar.
  • Cut the pitta in half and toast until hot but still soft.
  • Spread the insides with a little margarine and a teaspoon of mayonnaise.
  • Put slices of cheddar in each pitta half followed by as much carrot as you can fit in and lettuce leaf and some spring onion.
