Crispy Roast Sweet Potatoes Recipe

Just like traditional roast potatoes, but with sweet potatoes, as they are tastier, prettier and healthier. The secret ingredient that makes them super crispy is the polenta. These are perfect served with a nut loaf for a Sunday roast, for Christmas or any celebration meal.

1 tbsp polenta More products

Method

  • Preheat the oven to 200C (180C if you have a fan oven).
  • Peel the sweet potatoes or regular potatoes and cut them into the size you wish.
  • Put them in a saucepan with enough water to cover them, bring to the boil and cook for about 3 minutes.
  • Drain the sweet potatoes or potatoes and shake them in the strainer to scruff their surface off.
  • Put the butter to melt / the olive oil to heat in a roasting pan in the hot oven.
  • Sprinkle the polenta over the sweet potatoes / potatoes and tip them onto the hot butter / oil.
  • Season with sea salt flakes and freshly ground black pepper.
  • Cook for 30 to 45 minutes, until crispy and golden.
