Rustic Chestnut Bread Recipe

You will need

300g strong wholemeal flour OR More products
300g strong white flour More products
150g chestnut flour More products
1 heaped teaspoon salt More products
20g fresh yeast OR
1 7g dried yeast sachet or 2 tsp dried yeast More products
2 tbsp olive oil

Awaiting stock

1 1/2 cups or 375ml water, 1 cup or 250ml freshly boiled and 1/2 cup or 125ml cold

  • Mix the wheat and chestnut flour with the salt.
  • Dissolve the yeast in the water, stir in the olive oil and slowly add this to the flour mixture, mixing and kneading as you go.
  • Remove from the bowl and knead for a further 5 minutes on a floured board. Cover with a cloth and leave to rise for 2 or 3 hours in a warm place.
  • Heat the oven to 220C.
  • Cut the dough into 2 pieces, knead again for a minute or two. Shape into rough loaves and put into buttered loaf tins.
  • As soon as they are in the oven, reduce the heat to 200C and bake for about 30 minutes.
