Spinach and broccoli pasta

You will need

50g plain flour More products
500ml full fat milk Available only in our Edinburgh shops More products
A little grated nutmeg More products
about 100g baby spinach, washed and spin dried

1 broccoli head, cut into florets More products
6 tbsp breadcrumbs More products

  • Preheat the grill.
  • Put the butter, flour and milk into a medium pan and cook over a medium heat, stirring with a balloon whisk now and again until it boils.
  • Allow to simmer for a couple of minutes, then season with salt, black pepper and the nutmeg.
  • Remove from the heat and stir in the spinach, a handful at a time, until it is all wilted by the heat.
  • Then stir in three quarters of the cheese.
  • At the same time, cook the broccoli and pasta in a large pan of boiling and salted water for 2 minutes.
  • Drain and stir the broccoli and pasta gently into the spinach cheese sauce.
  • Tip into an ovenproof dish, then scatter over the remaining cheese and the breadcrumbs.
  • Grill for 5 minutes or so until the topping is golden.
