Savoury Gram Flour Pancakes

You will need

100g chickpea flour More products
1/2 tsp sea salt More products
1/2 tsp cayenne pepper More products
ground black pepper More products
330ml iced water
oil for frying More products

  • Preheat the oven at a very low temperature.
  • In a large mixing bowl, mix together the flour, salt, cayenne and black pepper.
  • Gradually add the iced water, beating well, until you get a smooth batter.
  • Adding more water if required.
  • Heat a little oil in a frying pan, add quarter of the batter, swirling it around the base to coat evenly, and cook until the top has dried out.
  • Transfer to a warm plate, cover loosely with foil and keep warm in the oven whilst you cook the remaining pancakes.
  • Serve with a savoury filling of your choice.
