Traditional Irish Fruit Barm Brack Recipe

This Irish speckled bread is somewhere between a fruit bread and a fruit cake, which means twice as many occasions to enjoy it. Enjoy it for breakfast and for tea over the Christmas holidays.

Baking Sweet

You will need

1 1/2 cups or 225g mixed vine fruit OR More products
1 1/2 cups or 225g mixed vine fruit with peel More products
1/2 cup or 100g soft brown sugar More products
3/4 cup or 200ml cold tea
2 cups or 200g wholemeal self-raising flour OR More products
2 cups or 200g gluten-free self-raising flour More products
1 egg, beaten

  • Soak the dried fruits, sugar and tea together overnight or for at least 2 hours.
  • Pre-heat the oven to 150C. Grease and flour a loaf tin.
  • Sift the flour into a bowl and add the beaten egg, pinch of salt and splash of milk. Mix well.
  • Scoop in the soaked mixed fruit and soaking juices and blend into the flour. Spoon the mixture into the prepared loaf tin.
  • Bake for 1 hour and leave in the tin for about 10 minutes before turning it out.
