Method

  • Fry the shallot and garlic in the olive oil over a medium heat until soft.
  • Add the beetroot and red wine vinegar and reduce.
  • Add the sugar and cook for 1 min.
  • Add the stock and simmer for 10 mins.
  • Transfer the soup into a serving bowl and serve with a spoon of greek yoghurt and chopped chives.
