Flourless Aduki Beans and Toasted Hazelnuts Brownies Recipe

Adzuki (or Aduki, or azuki, or English Red Mung) Beans are a very common ingredient in Asian desserts, Japanese in particular, where it is the main ingredient for anko, sweetened red bean paste. High in fibre and protein, Adzuki beans are also a good source of Folate, Potassium, Magnesium and B vitamins. And they happen to have a floury texture and naturally taste slightly sweet, making them a really good alternative to flour in these nutrition packed, delicious fudgy wholefood brownies.

You will need

1/3 cup or 50g hazelnuts More products
100g dry aduki beans OR More products
1 400g tinned aduki beans More products
100g or 8 fresh Medjool dates

  • If you can, soak the dried aduki beans for at least 4 hours, or overnight. Cook them in a large volume of water for about 20 minutes or until soft, but not mushy. Drain the beans and set aside to cool.
  • Alternatively, if using tinned aduki beans, simply rinse and drain them.
  • Preheat your oven to 180C of 350F.
  • Prepare a shallow baking dish by lining it with baking parchment or oiling it lightly with coconut oil.
  • Place the hazelnuts in a dry frying pan and toast them over medium heat until they become just golden and fragrant. Or place them on a baking tray and bake for 10 minutes in the oven, checking after the first five minutes to avoid them burning. Set aside to cool.
  • Put your drained aduki beans in a food processor along with the dates, cacao powder, eggs, coconut oil and vanilla extract and process until smooth.
  • Place the cooled hazelnuts in a zip-lock bag and crush them roughly using the back of a wooden spoon.
  • Fold the crushed hazelnuts into the brownie batter and transfer to you baking dish.
  • Bake for about 30 minutes. Allow to cool for about 15 minutes before slicing.
  • Right before serving, put about a tablespoon cacao powder in a fine sieve and sieve over the completely cooled brownie squares.
