About Organic Cider Vinegar

Fermented from the juice of a special blend of whole organically grown dessert and cyder apples, this vinegar has a beautifully delicate apple flavour and a pleasant clean finish.

For a simple vinaigrette, thicken 2 tablespoons of Aspall Cyder Vinegar with 6 tablespoons of virgin olive oil and season to taste.

Suitable for coeliacs, vegetarians and vegans.
Acidity: 5%

Vegan Quinoa Bean Burgers Recipe

Summary: Vegan burgers high in healthly fibre and protein. I've searched for many vegan bean burger or quinoa burger recipes, but they all either lacked a certain something or were too complicated. So, I came up with this recipe to combine the best of both worlds. Burgers that are good for you! This recipe uses metric cups, 1 cup = 250ml, but you can be flexible with ingredients and quantities. You can use any flour in place of spelt; any oil in place of rapeseed; any type of bread in place of wholemeal; sprouted quinoa in place of cooked. If you don't like sweetcorn please leave it out or use your favourite cooked vegetables instead. Flax can be replaced with more flour or breadcrumbs as a binder. I like to double the quantity using one tin of white beans and one tin of a different kind of bean (eg red kidney, aduki) then freeze for later.

Vegetarian Jersey Royals, Spiced Poached Pears and Roquefort Salad Recipe

Summary: Oh, how I wish you could taste this ! Roasted Jersey Royal potatoes, pear wedges simply poached in water and spices, Roquefort, with mixed salad leaves lightly dressed in a garlic mustard dressing. Feel free to use another blue cheese, if you can't get Roquefort. When poaching fruit, sugar is usually added to the poaching liquid, but I find this isn't necessary. I just leave the sugar out, and the fruits show case their natural sweetness. The flavours in this salad just go so well together ! Serves 2 as a main or 4 as a starter.
