About Fresh Coriander

Fresh coriander leaves are more commonly known as cilantro and bear a strong resemblance to Italian flat leaf parsley. This is not surprising owing to the fact that they belong to the same plant family. It is green, leafy and strong-smelling with a fresh, citrus taste that makes it an invaluable garnish and flavour enhancer.

Very low in saturated fat and cholesterol. It is also a good source of thiamine and Zinc, and a very good source of Dietary Fibre, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Riboflavin, Niacin, Vitamin B6, Folate, Pantothenic Acid, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.

I like to use coriander as a garnish when we have a dinner party - the leaves are such a pretty colour and shape and it is noce to have a garnish that you can eat and enjoy - not true of all garnishes in my experience.

Summary: Red lentil soup is a vegetarian staple, and so it should be : it is easy to make, the ingredients are cheap, and it is very healthy. This one is lightly spiced with whole cumin seeds and topped with fresh coriander, crunchy roasted cumin paprika and cayenne chickpeas. If making for a packed lunch, pack the roasted chickpea separately to keep them crunchy. Feel free to double the recipe for the Roasted Spicy Chickpeas, as they are a nice change (and much better for you) from any occasion where you would serve the usual chips or roasted peanuts.

Thai Style Vegan Jackfruit Curry Recipe

Summary: Jackfruit is cropping up as a plant based alternative everywhere, especially as 'pulled' jackfruit. Jackfruit is a tropical fruit native to South India. Fully ripe, it tastes sweet, floral and a little pungent. Young or unripe, it is used in savoury dishes like curries and stir-fries. It is the largest tree fruit in the world, one fruit can weigh up to 40 kg ! Jackfruit is low in fat, high in nutrients, and a good source of dietary fibre. Not unlike tofu, young jackfruit flesh has a neutral taste and will carry robust curry or barbecue flavours very well. Here we present to you our quick and easy week night Thai style jackfruit curry using a good quality ready-made red thai curry paste. The recipe calls for Bay, Kaffir Lime and Curry leaves ; just leave any or all of them out if you don't have them. Delicious served with some rice and wilted spinach or chard.

Raw Alkalising Heirloom Tomato, Avocado and Spirulina Salad Recipe

Summary: Perfectly ripe heirloom tomatoes are so delicious that the best way to do them justice is to eat them as a salad, simply dressed with lemon juice and olive oil. This salad is a twist to that, with added spirulina and avocado. Spirulina crunchies only contain spirulina, they have no added ingredient, but somehow the way they are produced makes them taste different from powdered spirulina, and add a crunchy element to this salad. But of course, you can use spirulina powder if you can't get the crunchies. If you can, leave the sea salt out ; the salad is naturally and delicately salted by the addition of seaweed. You may use any sea vegetable you have on hand, I like to use dulse because it is thought to contain Sodium, Potassium and its other minerals in a ratio that is suited for human health.
