About Organic Potato Starch Flour

Organic Potato Starch is a larger-grained starch that gelatinises at relatively low temperatures (compared to wheat or corn starches). Sauces thickened with root starches (like potato starch, arrowroot or tapioca from manioc root) are more translucent and glossy, and have a silky texture when eating. Root starches don't stand up as well as grain starches to longer cooking and so they're best used to thicken sauces toward the very end of cooking.

Potato starch is usually dissolved in water and added to soups, stews and sauces as a thickener, or dusted over foods before deep-frying. Potato starch tolerates higher temperatures than cornstarch when used as a thickener. It also produces superior flour-free sponge cakes, as it absorbs and retains moisture to a greater degree than wheat flour and produces cakes with a light texture.

A lot of gluten-free recipes call for potato starch, and the great thing about this is that you can buy just as much as you need without having to clog up your cupboard.

I use this potato starch whenever a recipe calls for potato flour and it works really well. I also love that as I buy in large bags it is better value and costs less per gm.
