Yuletide meringue

Hazelnuts and polenta make this meringue stand out from the rest. Wheat and gluten free.

You will need

110g caster sugar More products
fruit of choice
75g ground hazelnuts (pls grind) More products
40g polenta More products
3 large egg whites This item is only available in our high street shops. More products
1 tsp salt More products
175ml double or whipping cream This item is only available in our high street shops. More products

  • Preheat oven to 180 degrees cel or gas 4.
  • Line base of two 18cm sandwich tins with rounds of parchment paper.
  • Beat egg whites with salt until firm, then add 75g of sugar and beat again.
  • In a separate bowl mix the remaining sugar with the ground hazelnuts and polenta then fold this mixture into the egg whites.
  • Divide the mixture evenly between the tins and smooth the tops.
  • Bake in the oven for 25 - 30 mins until crisp and golden.
  • Turn the meringues out of the tins carefully and cool on a wire rack.
  • When the meringues are cold sandwich them together using the whipped cream and fruit.
  • Decorate the top with cream and fruit and your preferred choice of chocolate curls.
