Vegan or Veggie Mashed Potato

Basic mashed potato recipe. Make it vegan by replacing the butter with coconut oil and the milk with rice or almond milk.

a little turmeric and nutmeg to taste

2 tbsp coconut oil More products
1 cup or 250ml milk OR More products
1 cup or 250ml almond milk More products

Method

  • Chop the potatoes into smallish cubes and put onto boil or steam.
  • Mash the potatoes with the butter or coconut oil, the milk or rice milk or almond milk, turmeric and nutmeg. You can use stock from vegetables you have steamed or boiled instead of the milk. You could also mash in some roasted garlic (see mashed parsnip and celeriac recipe)
